Here is a great little recipe I was inspired to create after having brunch at a local cafe. Daniel ordered this delicious "breakfast casserole" that had layers of tortillas in it. It was delicious! I happened to have a bunch of tortillas in the freezer so I thought I'd give it a shot. Feel free to add olives, tomatoes, jalapenos...anything!
6-12 eggs
1/2 cup milk
6 corn tortillas
1 cup chicken sausage, ground
1 cup shredded cheddar cheese
1 4oz can green chilies
2 green onions, chopped
Preheat oven to 425F.
Whisk eggs and milk. place a layer of tortillas in a greased casserole dish. Pour 1/2 of the egg mixture over tortillas. Layer with cheese, chillies, and sausage. Add another layer of tortillas. Pour the rest of the egg mixture over tortillas. Add another layer of chilies and sausage. Top with cheese and green onions. Bake for approx. 25-35 minutes or until done in the middle*.
I served this with hash brown potatoes, salsa, sour cream and of course Tapatio!
* A great way to tell when an egg casserole is done, is when you shake it, it doesn't giggle ;)
