Alright. So I didn't lose the weight I wanted over the summer. I haven't given up yet though! With a Hawaii vacation just weeks away, I started the Duncan Diet (more info on that here: http://www.dukandiet.co.uk/). The first few days are a protein-only diet so coming up with ways to feel full and satisfied can be tricky. Luckily its not all about eating boiled chicken! Here is a recipe I tried last night and my husband, who was a skeptic, loved it! Its also perfect for kids, parties & gluten free peeps! Makes 10-12 hearty meatballs.
Meatballs:
1.5 lb Ground Turkey
2 eggs
1/4 cup Tapioca flower (or any gluten-free flour)
1 packet taco seasoning
Mix all ingredients in bowl and form into 1 1/2"-2" round balls. In frying pan, drizzle 1Tbsp olive oil and heat to medium-high. Place meatballs in frying pan and cover. Flip meatballs when browned and brown other side.
Cheese sauce:
1 Packet cream cheese
1 small can green chilies
1 Tbsp chili powder
1/2 tsp paprika
1/2 tsp garlic salt
Place all ingredients in sauce pan at medium heat. Stir until bubbly and serve over meatballs.
