I just got my wisdom teeth pulled and had to live on soup for a week! I have an amazing lentil soup recipe that I think is not only perfect for people who can't eat solid foods, but great for the type of rainy, fall weather we have been having. Bon appetit!
4 cups vegetable stock
2 cups lentils (dried)
1 14.5 oz can chopped tomatoes
3 cloves garlic, chopped
1/2 white onion, chopped
3 celery stalks, chopped
2 bay leaves
1/4 cup zucchini, cubed
1/4 cup yellow squash, cubed
1 large carrot, cubed
2 Tbsp. olive oil
2 Tbsp. balsamic vinegar
salt and pepper to taste
Bring stock to boil and add lentils. Cover and let simmer for 30 minutes. Add tomatoes and bay leaves. Heat saute pan at medium high and add olive oil. saute onion and celery. Add garlic, zucchini, squash and carrots. Saute for approximately 5 minutes, or until almost cooked through. Add vegetable mixture to lentils. Add vinegar and let simmer for appox. 10 minutes. Feel free to add 1 Tbsp. crushed red pepper for heat and/or chicken sausage, or steak for more protein. You can also place in plastic or glass containers and freeze.
