So this is a little more labor intensive, but so versatile! I made the pork and used it in tacos first. I used the leftover pork for this ragu. You can serve the ragu with any type of pasta! I chose to use gnocchi because I had some potatoes to get through. So here it is!
Pork:
1 5lb bone-in pork shoulder (butt)
1 onion, coarsely chopped
4-5 garlic cloves, whole
1 Tbsp sea salt
3 tsp ground pepper
1 can of beer
Place all above ingredients in crock pot and set for 6 hours. Once it is done (165F), let cool for approx 5-10 mins and using two forks, pull the pork apart into shredded pieces.
Ragu:
Pulled pork
1 Tbsp olive oil
carrots, chopped
3 celery ribs, chopped
1/2 onion, chopped
2 garlic cloves, chopped
1 Tbsp oregano
1 20 oz can tomatoes
1 1/2 Tbsp tomato paste
1 cup dry red wine
Salt & pepper to taste
Set aside approx 4 cups of pulled pork. In sauce pan, add oil, carrots, celery and onion and sauté until softened, about 5-8 mins. Add garlic, oregano, tomatoes, tomato paste and red wine. bring to a simmer for approx 15 mins. Add pork, salt and pepper to taste. Serve over any type of pasta or gnocchi with fresh grated parmesan.
Note: You will probably have some leftover pork so feel free to use for tacos! Its deish!
